Professional Athletes Enjoy Great Success in the Kitchen

The first American women to win in 40 years was Shalane Flanagan. Although the New York City Marathon is not her only achievement, she also released a cookbook! Flanagan is not the only one that is talented both as a sports star and master chef. Six times NBA star, Amar’e Stoudemire has released a cookbook with over 100 recipes, so did Tom Brady, Bo Jackson, Nolan Ryan, Natalie Coughlin and Randall Cobb.

Taste of the NFL Cookbook

Several professional Football stars have tackled cooking, and the results are simply sensational. Once they all decided to contribute towards a charity event, a book was published titled Taste of the NFL. While some of the football stars added their own tried and tested recipes, others simply added their personal family recipes. That saw some winning recipes made available to the public.

Winning Recipe – Sour Cream Chicken Enchiladas – Chad Henning – Dallas Cowboys

The Taste of the NFL cookbook features Mexican Fruit Cake with Cream Cheese Frosting by Joe DeLamiellure, Dave Lapham’s Chili Dip and Chad’s Henning’s’ Sour Cream Chicken Enchiladas. It also included Donny Anderson from the Green Bay Packers adding his Chicken Spaghetti, Earl Morrall from the Indianapolis Colts adding Breakfast Casserole and Jacksonville Jaguars player Ernest Wilford providing an amazing Apple Surprise recipe.

Sour Cream Chicken Enchiladas

Ingredients:

1 tablespoon butter
2 heaping tablespoons flour
Approximately 1/2 teaspoon sea salt
1/2 cup green pepper, finely chopped
2 tablespoons olive or avocado oil
4 cups grated Monterrey Jack cheese
1/2 cup onion, finely chopped
1-2 small cans chopped green chillies
2 cups cooked and shredded or chopped chicken
2 cups chicken broth
2 cloves fresh garlic, minced
1/2 cup sour cream
Chives
Couple packages of flour tortillas
Paprika

Preparations

First of all, preheat the oven to 350°F followed by chopping and cooking shredded chicken breasts and then set these aside. Sauté green pepper, onion and garlic in oil and butter until slightly tender. Stir in flour and cook for about 1-2 minutes. Add chicken broth, mix until smooth and cook until thickened. Add chillies and salt. Add 1 1/2 cups cheese and stir until smooth. Reduce heat. Add sour cream and stir until smooth.

Place a large scoop of chicken, cheese, and sauce in centre of each tortilla. Roll up and place in oiled large baking dish. Pour remaining sauce over all rolled up tortillas and sprinkle remaining cheese on top. Sprinkle with paprika and chives. Bake, covered, about 25-30 minutes. Uncover and broil for 2 minutes just to add a nice brown tint to enchiladas.

The retired Dallas Cowboy player shared his families favourite recipe, which they often enjoyed since living in Texas where they learned to enjoy Mexican Food. Henning’s shared that he had yet to meet someone that does not enjoy Sour Cream Chicken Enchilada, which is also amazing as leftovers.

Serve with sliced avocado, chopped tomato, and salsa on top!! To compliment the meal, serve black or pinto refried beans.
